SERVING SUGGESTION:


Ingredients

  • 1 cup cooked quinoa

  • 1 tsp olive oil, divided

  • 2 cups zucchini, thinly sliced

  • 2 cups yellow squash, thinly sliced

  • 1 clove garlic, thinly sliced

  • ½ cup scallions, thinly sliced

  • 2 oz. pistachios, chopped

  • Zest and juice from 1 lemon

  • ½ cup mint leaves, packed

  • 3 Tbsp pepitas

  • 1 cup fruit of choice


Directions

  1. In a large pan over medium heat, add 1 tsp of olive oil. Add zucchini and squash. Sauté for about 5-7 minutes before adding in garlic, salt, and pepper.

  2. Stir in the scallions, pistachios, lemon zest and juice, and mint.

  3. You can decide if you want to mix the quinoa in or serve over top. Adjust seasonings if needed before serving.

  4. Divide into 2 bowls, top each serving with 1 1/2 Tbsp of pepitas. Serve each with 1/2 cup of fruit on the side. Enjoy!
