1/4 cup dry oats
1/2 cup whole milk
1/4 cup water
1 tsp butter
1 tsp cinnamon
1 cup zucchini, grated
2 Tbsp chia seeds
1 tsp vanilla extract
1/2 oz. walnuts, chopped
1/2 cup banana, diced
In a small pot, combine milk, water, butter, cinnamon, and oats. Bring to a boil, then reduce heat to medium-low and simmer, about 3 minutes.
Add chia seeds and zucchini. Continue to simmer 4 minutes, stirring occasionally.
Remove from heat and stir in vanilla extract. Top with walnuts and bananas.
