Ingredients

  • 1/4 cup dry oats

  • 1/2 cup whole milk

  • 1/4 cup water

  • 1 tsp butter

  • 1 tsp cinnamon

  • 1 cup zucchini, grated

  • 2 Tbsp chia seeds

  • 1 tsp vanilla extract

  • 1/2 oz. walnuts, chopped

  • 1/2 cup banana, diced


Directions

  1. In a small pot, combine milk, water, butter, cinnamon, and oats. Bring to a boil, then reduce heat to medium-low and simmer, about 3 minutes.

  2. Add chia seeds and zucchini. Continue to simmer 4 minutes, stirring occasionally.

  3. Remove from heat and stir in vanilla extract. Top with walnuts and bananas.
