Ingredients

  • 1 Tbsp olive oil

  • 1 cup mushrooms, sliced

  • 1 cup spinach

  • Sea salt and pepper to taste

  • 2 eggs, poached (or cooked to your liking)

  • 1/2 cup warm cooked quinoa


Directions

  1. In a skillet, heat olive oil over medium high heat.

  2. Add mushrooms and season with salt and pepper. Cook mushrooms for a couple minutes or until soft. Add spinach and cook until wilted.

  3. Once vegetables are cooked to your liking, turn heat off.

  4. Add the quinoa to the bottom of a serving bowl. Next, add the vegetable mixture. Top bowl with 2 poached eggs. Enjoy!
