1 Tbsp olive oil
1 cup mushrooms, sliced
1 cup spinach
Sea salt and pepper to taste
2 eggs, poached (or cooked to your liking)
1/2 cup warm cooked quinoa
In a skillet, heat olive oil over medium high heat.
Add mushrooms and season with salt and pepper. Cook mushrooms for a couple minutes or until soft. Add spinach and cook until wilted.
Once vegetables are cooked to your liking, turn heat off.
Add the quinoa to the bottom of a serving bowl. Next, add the vegetable mixture. Top bowl with 2 poached eggs. Enjoy!
