Ingredients

  • 1 cup cooked quinoa

  • 3 cups grape tomatoes, halved

  • 1 1/2 cups cucumber, diced

  • 1/2 cup red bell pepper, diced

  • 15 oz. can chickpeas, drained and rinsed

  • 1/4 cup green onions, chopped

  • 1/4 cup fresh lime juice

  • 2 Tbsp olive oil

  • 1 Tbsp fresh parsley, chopped

  • 1/2 tsp garlic, minced

  • 1/2 tsp cumin

  • Sea salt and pepper, to taste


Directions

  1. In a large bowl, mix quinoa, tomatoes, cucumbers, red bell peppers, chickpeas and green onions. Set aside.

  2. In a smaller bowl, make the dressing by mixing the lime juice, olive oil, parsley, garlic, cumin, salt and pepper.

  3. Pour 1/2 of the dressing over the quinoa mixture. Toss to coat evenly. Save the rest of the dressing if you desire more.

  4. Divide into 5 equal servings.
