1 cup cooked quinoa
3 cups grape tomatoes, halved
1 1/2 cups cucumber, diced
1/2 cup red bell pepper, diced
15 oz. can chickpeas, drained and rinsed
1/4 cup green onions, chopped
1/4 cup fresh lime juice
2 Tbsp olive oil
1 Tbsp fresh parsley, chopped
1/2 tsp garlic, minced
1/2 tsp cumin
Sea salt and pepper, to taste
In a large bowl, mix quinoa, tomatoes, cucumbers, red bell peppers, chickpeas and green onions. Set aside.
In a smaller bowl, make the dressing by mixing the lime juice, olive oil, parsley, garlic, cumin, salt and pepper.
Pour 1/2 of the dressing over the quinoa mixture. Toss to coat evenly. Save the rest of the dressing if you desire more.
Divide into 5 equal servings.
