1 1/2 lb chicken breast, cooked and shredded
1 cup lite coconut milk, canned
4 cups chicken broth
¼ cup Lime Juice
2 cups carrots, shredded
1 cup broccoli, shredded
1 cup rutabaga, shredded
1 tsp curry powder
1/2 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp chili powder
1/2 tsp paprika
1/2 tsp sea salt
Lime, cut into wedges (optional)
Sea salt and pepper to taste
In a large pot combine Chicken Broth, Coconut Milk, Lime Juice, Thai Seasonings, Vegetables and Chicken. Season with Salt and Pepper to taste.
Bring soup to a boil. Reduce the heat, cover and let simmer for 15 minutes, until Vegetables are tender.
Serve warm. Optional to add extra Lime Juice.
Separate into 4 equal servings and enjoy.
