Ingredients

  • 1 1/2 lb chicken breast, cooked and shredded

  • 1 cup lite coconut milk, canned

  • 4 cups chicken broth

  • ¼ cup Lime Juice

  • 2 cups carrots, shredded

  • 1 cup broccoli, shredded

  • 1 cup rutabaga, shredded

Thai Seasoning:

  • 1 tsp curry powder

  • 1/2 tsp cinnamon

  • 1/2 tsp ground ginger

  • 1/2 tsp chili powder

  • 1/2 tsp paprika

  • 1/2 tsp sea salt

  • Lime, cut into wedges (optional)

  • Sea salt and pepper to taste


Directions

  1. In a large pot combine Chicken Broth, Coconut Milk, Lime Juice, Thai Seasonings, Vegetables and Chicken. Season with Salt and Pepper to taste.

  2. Bring soup to a boil. Reduce the heat, cover and let simmer for 15 minutes, until Vegetables are tender.

  3. Serve warm. Optional to add extra Lime Juice.

  4. Separate into 4 equal servings and enjoy.
