1-1/2 lbs ground beef, 97% lean
1 tsp olive oil
1 Tbsp apple cider vinegar
1-1/2 Tbsp chili powder
1/2 tsp garlic powder
1/2 tsp cumin
1/2 tsp paprika
1/4 tsp sea salt
1 cup brown rice, cooked
1 cup hummus
4 cups spinach or lettuce
2 cups cherry tomatoes, diced
1 cup corn, cooked
Heat oil in a skillet over medium-high heat. Add ground beef. Cook until slightly browned.
Add vinegar, chili powder, garlic powder, cumin, paprika and salt. Continue to cook until fully done.
Divide beef into 4 equal servings. Cool and refrigerate beef to use for each bowl you make throughout the week.
To serve: combine 6 oz. beef with 1/4 cup rice, 1/4 cup hummus, 1 cup spinach or lettuce, 1/2 cups tomatoes, and 1/4 cup corn. Mix well.
