1/2 cup sweet potato, mashed
2 eggs
1 Tbsp coconut oil
¾ tsp ground cinnamon
Pinch of ground ginger
Pinch of allspice
Pinch of sea salt
Boil sweet potato until soft, and mash.
Whisk the mashed sweet potato and eggs together until well-combined. Add seasonings, if desired, and stir.
Heat coconut oil on a skillet over medium-low heat. Drop the sweet potato mixture onto the pan and cook until golden brown on each side.
