2 lbs Mushrooms, cleaned and stemmed
3 Tbsp Olive Oil
1 Cup Feta Cheese, crumbled
½ Cup Kalamata Olives
1 Cup Tomatoes, finely chopped
1 tsp Garlic Powder
Sea Salt and Pepper to taste
Preheat oven to 350 degrees.
Very lightly, coat the Mushroom Caps and the edges with Olive Oil and place on a rimmed baking sheet.
In a small bowl, add Feta Cheese, Olives, Tomatoes, Garlic Powder and Salt and Pepper.
Stuff Mushroom Caps with mixture.
Bake for 30-40 minutes or until the Mushrooms are cooked through.
Serve immediately.
