Ingredients

  • 2 lbs Mushrooms, cleaned and stemmed

  • 3 Tbsp Olive Oil

  • 1 Cup Feta Cheese, crumbled

  • ½ Cup Kalamata Olives

  • 1 Cup Tomatoes, finely chopped

  • 1 tsp Garlic Powder

  • Sea Salt and Pepper to taste


Directions

  1. Preheat oven to 350 degrees.

  2. Very lightly, coat the Mushroom Caps and the edges with Olive Oil and place on a rimmed baking sheet.

  3. In a small bowl, add Feta Cheese, Olives, Tomatoes, Garlic Powder and Salt and Pepper.

  4. Stuff Mushroom Caps with mixture.

  5. Bake for 30-40 minutes or until the Mushrooms are cooked through.

  6. Serve immediately.
