3 Tbsp chia seeds
½ cup whole milk
½ cup strawberries, fresh or frozen
¼ cup beets, cubed and steamed
½ tsp vanilla extract
1 tsp coconut oil
1 tsp maple syrup
Coconut shavings (optional)
Using a blender or food processor, add the milk, strawberries, beets and vanilla and coconut oil. Blend until completely smooth.
Slowly pour into a small bowl and add the chia seeds. Stir until thoroughly mixed.
Over with saran wrap and place in the fridge overnight, or for at least 4-5 hours.
When ready to serve add the maple syrup and stir. Add the coconut shavings last, if desired.
