Strawberry & Beet Chia Seed Pudding

Ingredients

  • 3 Tbsp chia seeds

  • ½ cup whole milk

  • ½ cup strawberries, fresh or frozen

  • ¼ cup beets, cubed and steamed

  • ½ tsp vanilla extract

  • 1 tsp coconut oil

  • 1 tsp maple syrup

  • Coconut shavings (optional)


Directions

  1. Using a blender or food processor, add the milk, strawberries, beets and vanilla and coconut oil. Blend until completely smooth.

  2. Slowly pour into a small bowl and add the chia seeds. Stir until thoroughly mixed.

  3. Over with saran wrap and place in the fridge overnight, or for at least 4-5 hours.

  4. When ready to serve add the maple syrup and stir. Add the coconut shavings last, if desired.
