Ingredients

  • 2 (6oz) Chicken Breasts

  • Sea Salt and Pepper to taste

  • 2 oz Mozzarella Cheese

  • 1 Cup Spinach

  • 1 Cup Artichoke Hearts, chopped

  • 1 Tbsp Olive Oil


Directions

  1. Preheat oven to 400 degrees F.

  2. Pound each Chicken Breast between 2 sheets of plastic wrap to ¼ inch thickness. Grease each breast with Olive Oil and sprinkle with Salt and Pepper.

  3. Put 1oz. of Cheese, ½ Cup Artichoke Hearts and ½ Cup Spinach in each breast, Roll it up and secure with a toothpick. Arrange in an 11x7 inch baking dish.

  4. Bake for about 35 minutes or until instant-read thermometer inserted into center registers 160 degrees.
