2 (6oz) Chicken Breasts
Sea Salt and Pepper to taste
2 oz Mozzarella Cheese
1 Cup Spinach
1 Cup Artichoke Hearts, chopped
1 Tbsp Olive Oil
Preheat oven to 400 degrees F.
Pound each Chicken Breast between 2 sheets of plastic wrap to ¼ inch thickness. Grease each breast with Olive Oil and sprinkle with Salt and Pepper.
Put 1oz. of Cheese, ½ Cup Artichoke Hearts and ½ Cup Spinach in each breast, Roll it up and secure with a toothpick. Arrange in an 11x7 inch baking dish.
Bake for about 35 minutes or until instant-read thermometer inserted into center registers 160 degrees.
