2/3 cups Quinoa, dry
1 1/2 Cups Vegetable Broth
1 Cup Onion, chopped
1 Tbsp. Olive Oil
1 Cup Red Bell Pepper, chopped
1/2 cup Carrots, chopped
1/2 cup Cauliflower, chopped
1 Cup Green Beans, chopped
2 Tbsp. Garlic, minced
Sea Salt and Pepper
Seasonings of your choice: Cilantro, Basil, Parsley
Pour Quinoa in the slow cooker and add Olive Oil to coat
Stir in the broth, Onion, Peppers, Cauliflower, Green Beans and Garlic. Season with Salt and Pepper
Cook on low for 4-6 hours or high for 2-4 hours. Liquid should be completely absorbed into the Quinoa
When ready to serve, top the Quinoa with your choice of Cilantro, Basil or Parsley
Divide into 4 equal servings
