Shrimp, Kale and Sweet Potato Skillet

Ingredients

  • 2 Tbsp olive oil, divided

  • 1 cup onion, chopped

  • 1 tsp garlic, minced

  • Pinch of crushed red pepper

  • 1 cup sweet potatoes, chopped

  • 12 oz. shrimp, peeled and deveined

  • 3 cups kale, roughly chopped

  • Sea salt and pepper to taste


Directions

  1. In a large skillet add 1 Tbsp olive oil, onions and crushed red pepper, cook over medium heat until soft.

  2. Add garlic and cook for another minute.

  3. Add sweet potatoes and cook until soft, about 15-20 minutes. If need be, add 2-4 Tbsp of water to help cook the sweet potatoes.

  4. Add 1 Tbsp olive oil and shrimp. Cook for about 3-5 minutes, or until they turn pink.

  5. Reduce the heat and add kale. Cook until wilted.

  6. Season with sea salt and pepper.
