½ cup oatmeal, cooked
1/4 tsp olive oil
½ cup hopped vegetable mixture (mushrooms, red onion, green pepper)
½ cup spinach
1 clove garlic, minced
2 fried eggs
¼ cup avocado, diced
Sea salt and pepper to taste
¼ tsp red pepper flakes
In a saucepan sauté vegetable mixture in olive oil until soft, about 5 minutes.
Add spinach and garlic and sauté until spinach is just wilted, about 1 minute.
While vegetables are cooking, cook your eggs to desire doneness.
Top the oatmeal with vegetables, eggs, and avocado. Season with salt, pepper, and red pepper flakes.
