Ingredients

  • ½ cup oatmeal, cooked

  • 1/4 tsp olive oil

  • ½ cup hopped vegetable mixture (mushrooms, red onion, green pepper)

  • ½ cup spinach

  • 1 clove garlic, minced

  • 2 fried eggs

  • ¼ cup avocado, diced

  • Sea salt and pepper to taste

  • ¼ tsp red pepper flakes


Directions

  1. In a saucepan sauté vegetable mixture in olive oil until soft, about 5 minutes.

  2. Add spinach and garlic and sauté until spinach is just wilted, about 1 minute.

  3. While vegetables are cooking, cook your eggs to desire doneness.

  4. Top the oatmeal with vegetables, eggs, and avocado. Season with salt, pepper, and red pepper flakes.
