Ingredients

  • 2 eggs, fried

  • 1/2 cup quinoa, cooked

  • 1 cup spinach

  • 1/2 cup cauliflower, roasted

  • 1 tsp butter


Directions

  1. In a bowl, layer spinach and quinoa. Top with cauliflower. Set aside.

  2. Cook eggs (over-medium recommended) in butter and add to bowl. Break yolks to create dressing for the salad.
