Roasted Turkey Stir Fry

Ingredients

  • 1 Cup cooked Brown Rice

  • 1 Cup Onion, chopped

  • 1 Cup Broccoli, chopped

  • 1 Cup Red Bell Pepper, chopped

  • 1 Cup Mushrooms, chopped

  • 5 Cloves Garlic, minced

  • 1 Tbsp Ginger, grated

  • Sea Salt to taste

  • 12oz Turkey, cooked and chopped

  • 2 Tbsp Olive Oil


Directions

  1. Heat Oil in a large skillet over medium-high heat. Add the Onion and sauté 5 minutes, stirring frequently until the Onion is translucent.

  2. Add the Broccoli and Peppers, cover with a lid, stirring occasionally. Cook 5 to 8 minutes until vegetables have softened, but not mushy.

  3. Add Mushrooms, Garlic and Ginger and continue cooking for 3 minutes.

  4. Add Turkey, cover and cook until heated through. Add Salt to taste and Serve over Brown Rice.
