1 Cup cooked Brown Rice
1 Cup Onion, chopped
1 Cup Broccoli, chopped
1 Cup Red Bell Pepper, chopped
1 Cup Mushrooms, chopped
5 Cloves Garlic, minced
1 Tbsp Ginger, grated
Sea Salt to taste
12oz Turkey, cooked and chopped
2 Tbsp Olive Oil
Heat Oil in a large skillet over medium-high heat. Add the Onion and sauté 5 minutes, stirring frequently until the Onion is translucent.
Add the Broccoli and Peppers, cover with a lid, stirring occasionally. Cook 5 to 8 minutes until vegetables have softened, but not mushy.
Add Mushrooms, Garlic and Ginger and continue cooking for 3 minutes.
Add Turkey, cover and cook until heated through. Add Salt to taste and Serve over Brown Rice.
