Ingredients

  • 2 cups red potatoes, diced

  • 4 cloves garlic, excess paper removed but not peeled

  • 2 Tbsp olive oil, divided

  • 10 fresh sage leaves

  • Sea salt and pepper, to taste

  • Zest of 2 lemons


Directions

  1. Preheat the oven to 400°. Line a baking sheet with parchment paper.

  2. In a large mixing bowl, add 1 1/2 Tbsp olive oil, salt, pepper & garlic. Add potatoes and toss to coat completely.

  3. Pour onto prepared baking sheet and bake for 20 minutes. Remove from oven and flip. Bake for another 15 minutes or until desired crispiness.

  4. While potatoes are baking, heat the remaining 1/2 Tbsp olive oil in a small pan over medium heat. Add sage leaves and cook until crispy. When finished place the leaves on a paper towel to dry. Season with salt.

  5. Top the potatoes with lemon zest and sage leaves. Divide into 4 equal servings and enjoy!
