2 tsp olive oil
1/2 cup onion, chopped
1/2 cup celery, chopped
1/2 cup green pepper, chopped
2-1/2 cups cauliflower rice
2 cups red beans, drained and rinsed
Sea salt and pepper to taste
1 tsp cumin
1/2 tsp paprika
1 clove garlic, minced
1/2 tsp chili powder
1/2 tsp Italian seasoning
Heat olive oil in a large pan over medium heat. Add onion and cook for 2 minutes and then add celery and green pepper. Cook until vegetables are softened-about 3 to 5 minutes.
Add the cauliflower rice, beans and seasonings to the pan, stir until combined and cook until cauliflower is tender, about 7-10 minutes.
