Ingredients

  • 2 tsp olive oil

  • 1/2 cup onion, chopped

  • 1/2 cup celery, chopped

  • 1/2 cup green pepper, chopped

  • 2-1/2 cups cauliflower rice

  • 2 cups red beans, drained and rinsed

  • Sea salt and pepper to taste

  • 1 tsp cumin

  • 1/2 tsp paprika

  • 1 clove garlic, minced

  • 1/2 tsp chili powder

  • 1/2 tsp Italian seasoning


Directions

  1. Heat olive oil in a large pan over medium heat. Add onion and cook for 2 minutes and then add celery and green pepper. Cook until vegetables are softened-about 3 to 5 minutes.

  2. Add the cauliflower rice, beans and seasonings to the pan, stir until combined and cook until cauliflower is tender, about 7-10 minutes.
