Ingredients

  • 1/2 tsp garlic powder

  • 2 Tbsp olive oil

  • 1 cup pizza sauce

  • 2 cups mozzarella cheese, grated

  • 1 cup vegetables (optional), choose your favorite

  • 3/4 cup quinoa, covered in 1 inch of water and soaked 6-8 hours

  • 1/4 cup water

  • 1/2 tsp baking powder

  • 1/2 tsp sea salt

  • 1 tsp Italian seasoning


Directions

  1. Preheat oven to 425°F.

  2. Line a 9-inch pan with parchment paper. Spread 1 Tbsp olive oil evenly over paper.

  3. Drain and rinse quinoa, then add to blender or food processor. Add 1/4 cup water, baking powder, seasonings and remaining olive oil. Blend until smooth and creamy (it will resemble cake batter).

  4. Pour batter onto prepared pan. Bake 15 minutes. Remove from oven, flip carefully and return for another 10-15 minutes, until browned and edges are crispy.

  5. Top with sauce, cheese, vegetables and anything else you like. Bake for another 12-15 minutes, until cheese has melted and started to brown.
