1 cup raspberries
2/3 cup lite coconut milk
1 cup blueberries
1 cup chia seeds
2/3 cup unsweetened coconut flakes
Layer mixtures into 4 serving containers: blueberry mixture on bottom, coconut flakes in middle, raspberry mixture on top.
Serve immediately.
In a blender or food processor, blend raspberries and 1/3 cup coconut milk until smooth. Transfer to an air-tight container. Set aside.
Repeat step one using blueberries and remaining coconut milk.
Add 1/2 cup chia seeds to each mixture. Mix well. Cover each and refrigerate for at least an hour.
