2 cups red potatoes, diced
Sea salt and pepper, to taste
4 tsp butter
1/8 Cup fresh parsley, chopped
Dice the potatoes to desired size. Quartered would be recommended.
Put potatoes in a saucepan with cold water and bring to a boil and add about a tsp of sea salt.
Reduce heat to a simmer and cook until potatoes are fork tender.
Drain water from the potatoes and add them back into the saucepan with the butter and parsley. Stir them around until all potatoes are evenly coated. Keep them on the low heat for an addition al 5 minutes.
Serve immediately.
