3 cups potatoes, washed and cut (new, fingerling, or red work best)
2 tsp garlic powder
1 tsp dried ground rosemary
1 tsp dried thyme
Sea salt & pepper, to taste
2 Tbsp white wine vinegar
1/4 cup olive or avocado oil
1/4 cup red onion, minced
1/4 cup chives or scallions, sliced
Boil potatoes until they are cooked through, about 20 minutes.
While potatoes boil, prepare vinaigrette. In a bowl, combine garlic powder, rosemary, thyme, salt, pepper and vinegar. Mix well, then slowly add oil to bowl while whisking together.
Cool potatoes. Toss with vinaigrette, red onion and chives. Adjust seasonings, if needed.
Refrigerate until ready to serve.
