1 Cup warm cooked Quinoa
1/2 Cup Cheddar Cheese, shredded
2 Eggs
1/3 Cup Spinach Leaves, chopped
1 Tbsp Parsley, chopped
1/2 tsp Italian Seasonings
1/2 tsp Black Pepper
1/4 tsp Sea Salt
Preheat oven to 350 degrees. Grease mini muffin pan with Organic Cooking Spray.
In a medium bowl, mix warm Quinoa with Cheese. Allow Cheese to melt. Add the remaining ingredients and mix to combine.
Spoon mixture into muffin pan, filling to the top. Bake for 20 minutes.
Remove from the oven and allow to cool for 10 minutes.
