Ingredients

  • 1 cup cucumber, quartered

  • 1 cup green bell pepper, chopped

  • 1 cup red bell pepper, chopped

  • 1 cup grape tomatoes, halved

  • 1 cup fresh or thawed frozen corn kernels

  • 2 Tbsp fresh cilantro, chopped

  • 2 Tbsp red wine vinegar

  • 1 Tbsp olive oil

  • 1/2 tsp cumin

  • 1 tsp garlic, minced

  • 1/2 tsp sea salt

  • Black pepper to taste

  • 1/2 tsp crushed red pepper (optional)


Directions

  1. In a large bowl, combine cucumber, bell peppers, tomatoes, corn, and cilantro. Mix.

  2. In a separate bowl, combine vinegar, oil, cumin, garlic, salt, pepper, and crushed pepper (optional). Mix. Add to vegetables. Mix well.

  3. Cover and chill at least 30 minutes. Adjust seasonings if needed. Toss again just before serving.
