5 cups zucchini, spiralized
1 Tbsp olive oil
2 cups tomato, chopped
2 garlic cloves, finely minced
1/4 cup olives, sliced
1 tsp dried oregano
1/4 tsp red pepper flakes
1 Tbsp lemon juice
sea salt and pepper to taste
9 oz shrimp, cooked and warm
1/2 cup feta cheese
1/3 cup basil leaves, thinly sliced
Spiralize the zucchini and place in a large bowl.
Heat the olive oil in a large skillet over medium-high heat. Add the tomatoes and garlic and stir for 5 minutes until the tomatoes have softened.
Add the olives, oregano, red pepper flakes, lemon juice, sea salt and pepper and cook for another 5 minutes.
Add in the zucchini noodles and cook for another 2-3 minutes.
Remove from heat, add the shrimp and stir in the feta and basil.
Separate into 4 equal servings and serve.
