Mediterranean Zucchini Noodles with Shrimp

Ingredients

  • 5 cups zucchini, spiralized

  • 1 Tbsp olive oil

  • 2 cups tomato, chopped

  • 2 garlic cloves, finely minced

  • 1/4 cup olives, sliced

  • 1 tsp dried oregano

  • 1/4 tsp red pepper flakes

  • 1 Tbsp lemon juice

  • sea salt and pepper to taste

  • 9 oz shrimp, cooked and warm

  • 1/2 cup feta cheese

  • 1/3 cup basil leaves, thinly sliced


Directions

  1. Spiralize the zucchini and place in a large bowl.

  2. Heat the olive oil in a large skillet over medium-high heat. Add the tomatoes and garlic and stir for 5 minutes until the tomatoes have softened.

  3. Add the olives, oregano, red pepper flakes, lemon juice, sea salt and pepper and cook for another 5 minutes.

  4. Add in the zucchini noodles and cook for another 2-3 minutes.

  5. Remove from heat, add the shrimp and stir in the feta and basil.

  6. Separate into 4 equal servings and serve.
