2 eggs
Sea salt and pepper to taste
1 Tbsp olive oil
1/4 cup sun-dried tomatoes, finely chopped
1/4 cup roasted red pepper
1/2 cup of baby spinach, packed
Pinch of red pepper flakes
Sprinkle of parmesan cheese
In a small mixing bowl, beat eggs together with salt.
Heat olive oil in a skillet over medium-high heat. Add sun-dried tomatoes and red peppers. Stirring occasionally for a couple minutes.
Add the spinach and red pepper flakes. Cook until almost wilted, stirring occasionally.
Add the eggs and cook. Stirring constantly for up to 1 minute, or until the eggs are cooked to your liking.
Sprinkle parmesan cheese and black pepper on top, stir to combine.
