Ingredients

  • 2 eggs

  • Sea salt and pepper to taste

  • 1 Tbsp olive oil

  • 1/4 cup sun-dried tomatoes, finely chopped

  • 1/4 cup roasted red pepper

  • 1/2 cup of baby spinach, packed

  • Pinch of red pepper flakes

  • Sprinkle of parmesan cheese


Directions

  1. In a small mixing bowl, beat eggs together with salt.

  2. Heat olive oil in a skillet over medium-high heat. Add sun-dried tomatoes and red peppers. Stirring occasionally for a couple minutes.

  3. Add the spinach and red pepper flakes. Cook until almost wilted, stirring occasionally.

  4. Add the eggs and cook. Stirring constantly for up to 1 minute, or until the eggs are cooked to your liking.

  5. Sprinkle parmesan cheese and black pepper on top, stir to combine.
