4- 6 oz. chicken breasts
1 tsp olive oil
1/2 Tbsp thyme
1 tsp sea salt
1 tsp black pepper
1/4 cup walnuts, chopped
1/3 cup apple cider vinegar
2 Tbsp pure maple syrup
1/2 cup water
In a small dish, mix thyme, salt, and pepper. Rub over chicken. Set aside.
Toast walnuts in a skillet over low-medium heat. Stir constantly, making sure not to burn (they burn easily).
Once golden and fragrant, transfer walnuts to a dish and increase heat on the stove.
Add oil to skillet. Cook chicken for about 5 minutes per side or until cooked through. Transfer to a clean plate.
Pour apple cider vinegar into the same skillet. Cook 1 minute, stirring constantly. Add maple syrup and water. Simmer until thickened. Stir in walnuts.
Pour sauce over chicken.
