1 tsp olive oil
1/2 lime, juice and zest
1 Tbsp fresh cilantro, coarsely chopped
1 Tbsp jalapeño, coarsely chopped (optional)
1/2 clove garlic, minced
2 6-oz salmon filets
Sea salt and pepper to taste
Preheat oven to 400°F.
In a small bowl, combine olive oil, lime juice and zest, cilantro, jalapeño, and garlic. Whisk until smooth. Set aside.
Line a baking sheet with foil or parchment paper. Lay salmon on baking sheet and season with salt and pepper.
Cover salmon with lime and cilantro mixture. Bake 15-20 minutes, or until salmon has reached an internal temperature between 145 and 160 degrees.
