Ingredients

  • 1 Tbsp Avocado Oil

  • 2 Cups Yellow Onion, chopped

  • 1/2 Cup Carrot, chopped

  • 1 Cup Green Bell Pepper, chopped

  • 2 Cloves Garlic, minced

  • 1 tsp Cumin

  • 1 tsp Chili Powder

  • 2 Tbsp Tomato Paste

  • 3 Cups Vegetable Broth

  • 2 Cups Organic Tomato Sauce

  • 1 Tbsp Sriracha Sauce

  • 1 Tbsp Dijon Mustard

  • 1 tsp Brown Sugar

  • 1 Cup Green Lentils, dry

  • 8 Lettuce Leaves, for wrapping (2 per serving)

  • Sea Salt and Black Pepper to taste


Directions

  1. In a large pot, heat Avocado Oil over medium heat. Cook Onions, Carrots and Green Pepper for about 5 minutes or until soft.

  2. Add the Garlic, Cumin, Chili Powder and Tomato Paste and mix in with the vegetables.

  3. Next, add the Broth, Tomato Sauce, Sriracha Sauce, Dijon Mustard, Brown Sugar and mix. Then add the Lentils.

  4. Increase the heat slightly and bring to a boil. Cover (lid slightly ajar) and reduce the heat.

  5. Simmer until Lentils are tender, about 45 minutes, stirring occasionally.

  6. Serve inside 2 Lettuce Leaves per serving.
