Ingredients

  • 1 egg

  • 1/4 cup whole milk ricotta cheese

  • 2 Tbsp coconut milk

  • 1 Tbsp chia seeds

  • 1 tsp butter

  • 1/4 tsp lemon zest

  • 1/8 tsp baking soda

  • 1-1/2 Tbsp coconut flour

  • 1/4 tsp vanilla extract

  • 1/2 cup berries (of your choice)


Directions

  1. Place all ingredients in a blender/ food processor, except for the butter and berries. Blend until smooth.

  2. Heat the butter on a skillet over low-medium heat. Pour the batter on the skillet, top with berries. Cook on each side for about 2-4 minutes, or until puffed and golden-brown.
