1 egg
1/4 cup whole milk ricotta cheese
2 Tbsp coconut milk
1 Tbsp chia seeds
1 tsp butter
1/4 tsp lemon zest
1/8 tsp baking soda
1-1/2 Tbsp coconut flour
1/4 tsp vanilla extract
1/2 cup berries (of your choice)
Place all ingredients in a blender/ food processor, except for the butter and berries. Blend until smooth.
Heat the butter on a skillet over low-medium heat. Pour the batter on the skillet, top with berries. Cook on each side for about 2-4 minutes, or until puffed and golden-brown.
