1/4 cup avocado, diced
1 Tbsp fresh lemon juice
Sea salt and pepper to taste
1 cup kale, chopped
1/4 cup chickpeas, rinsed and drained
1 tsp olive or avocado oil
3 Tbsp hemp seeds, flaxseed, sunflower seeds, or pepitas.
Dash of sea salt (for the mashed avocado)
In a mixing bowl, combine avocado, 1/2 of the lemon juice and a dash of salt. Mash together.
Add chopped kale. Massage together, by hand or using a spatula, until kale becomes tender. Top with chickpeas.
In a small bowl, mix oil, remaining lemon juice, salt and pepper. Drizzle on salad. Toss to coat.
Top with hemp seeds.
