Ingredients

  • 1/4 cup avocado, diced

  • 1 Tbsp fresh lemon juice

  • Sea salt and pepper to taste

  • 1 cup kale, chopped

  • 1/4 cup chickpeas, rinsed and drained

  • 1 tsp olive or avocado oil

  • 3 Tbsp hemp seeds, flaxseed, sunflower seeds, or pepitas.

  • Dash of sea salt (for the mashed avocado)


Directions

  1. In a mixing bowl, combine avocado, 1/2 of the lemon juice and a dash of salt. Mash together.

  2. Add chopped kale. Massage together, by hand or using a spatula, until kale becomes tender. Top with chickpeas.

  3. In a small bowl, mix oil, remaining lemon juice, salt and pepper. Drizzle on salad. Toss to coat.

  4. Top with hemp seeds.
