1 Cup cooked Quinoa
1/2 Cup Small White Cannelloni Beans
1/2 Cup Black Beans
2 Cup Baby Spinach
1/2 Cup Yellow Onion, finely chopped
1/2 Cup Roasted Red Pepper, chopped
1/2 Cup Marinated Artichokes, halved
1/2 Cup Yellow Bell Pepper, chopped
1/2 Cup medium Roma Tomato, chopped
1/2 tsp Lemon Zest
2 Tbsp Fresh Parsley
4 Tbsp Fresh, Basil
Freshly Ground Black Pepper to taste
1 tsp Garlic, minced
1/2 tsp Dried Oregano
1/2 tsp Red Chili Flakes
Prepare Quinoa according to package directions.
In a medium-sized bowl combine all ingredients and toss to combine. Taste and adjust spices to taste.
If time allows, refrigerate for about 30 minutes to really let flavors meld.
