Ingredients

  • 1 Cup cooked Quinoa

  • 1/2 Cup Small White Cannelloni Beans

  • 1/2 Cup Black Beans

  • 2 Cup Baby Spinach

  • 1/2 Cup Yellow Onion, finely chopped

  • 1/2 Cup Roasted Red Pepper, chopped

  • 1/2 Cup Marinated Artichokes, halved

  • 1/2 Cup Yellow Bell Pepper, chopped

  • 1/2 Cup medium Roma Tomato, chopped

  • 1/2 tsp Lemon Zest

  • 2 Tbsp Fresh Parsley

  • 4 Tbsp Fresh, Basil

  • Freshly Ground Black Pepper to taste

  • 1 tsp Garlic, minced

  • 1/2 tsp Dried Oregano

  • 1/2 tsp Red Chili Flakes


Directions

  1. Prepare Quinoa according to package directions.

  2. In a medium-sized bowl combine all ingredients and toss to combine. Taste and adjust spices to taste.

  3. If time allows, refrigerate for about 30 minutes to really let flavors meld.
