6 cups spinach, chopped (frozen & thawed or cooked & drained)
2 red peppers, finely chopped
1/2 cup plain greek yogurt
3 oz cheddar cheese, grated
8 Tbsp parsley, chopped
1/2 tsp cumin
Sea salt & black pepper to taste
If using frozen spinach, allow it to thaw overnight in the refrigerator in a strainer or colander with a towel underneath. When thawed, take spinach in hand and squeeze out all excess water. For faster thawing, place package in the microwave and warm up in small increments making sure not to over cook the spinach.
Add all ingredients to a bowl and stir to combine.
Add plenty salt and pepper.
