2 Tbsp olive oil
1 Tbsp fresh lime juice
1/4 tsp paprika
Sea salt and pepper to taste
1/4 Tsp dijon mustard
12 oz shrimp, peeled and deveined
1 cup apples, peeled, cored and julienned
Dressing: In a small bowl combine oil, lime juice, paprika, salt, pepper, and mustard. Whisk and set aside.
Grill shrimp over medium-high heat for 1-2 minutes per side or until lightly charred and white throughout.
In a medium bowl toss apples with 1 Tbsp dressing. Arrange on platter and top with Shrimp. Drizzle remaining dressing on top.
