Ingredients

  • 2 lbs raw shrimp, peeled and deveined

  • 5 medium ears of corn, cut in thirds

  • 2-1/2 cups baby red potatoes, cubed

  • 2-1/2 cups yellow squash, sliced

  • 2-1/2 cups zucchini, sliced

  • 2-1/2 Tbsp olive oil

  • 6 tsp Old Bay seasoning

  • 1 Tbsp parsley, chopped


Directions

  1. Tear five sheets of foil in 18-inch lengths. Fold the edges upward to form a bowl shape.

  2. Divide shrimp, potatoes, squash, and zucchini into five equal portions and arrange in prepped foil sheets.

  3. Add 3 one-third-cut pieces of corn to each packet.

  4. Drizzle 1/2 Tbsp oil over the ingredients in each packet and sprinkle with Old Bay.

  5. Fold packets the rest of the way so they are sealed tightly.

  6. Grill for 12 to 15 minutes.

  7. Garnish with parsley before serving.
