1/2 Cup Onion, chopped
1/2 Cup Broccoli, chopped
1 Medium Sweet Potato, baked and peeled
2/3 Cup Rolled Oats
1 Egg
1/2 tsp Sea Salt
1 tsp Italian Seasoning
1/2 tsp Garlic Powder
2 Tbsp Olive Oil
1-1/2 Cups Mozzarella Cheese, shredded
1/2 Cup Mushrooms, sliced
1/2 Cup Green Peppers, chopped
Preheat oven to 400 degrees.
Add Sweet Potato and oats to a blender or food processor and pulse until very fine.
Add the Egg and Seasonings; pulse until contents resemble a loose dough or thick batter.
Line a cookie sheet or other pan with parchments paper and spread 1 Tbsp Olive Oil evenly over paper.
Add dough to pan and press to shape. Crust should be about ¼ - ½ inch thick.
Bake for 25-30 minutes, until top is dry to the touch.
Remove from oven, let cool, and flip crust over on the pan. Brush top side with Olive Oil and bake for another 5-10 minutes, until top is crispy.
Top with Cheese and Vegetables and put back in the oven to melt the Cheese.
