Ingredients

  • 1/2 Cup Onion, chopped

  • 1/2 Cup Broccoli, chopped

  • 1 Medium Sweet Potato, baked and peeled

  • 2/3 Cup Rolled Oats

  • 1 Egg

  • 1/2 tsp Sea Salt

  • 1 tsp Italian Seasoning

  • 1/2 tsp Garlic Powder

  • 2 Tbsp Olive Oil

  • 1-1/2 Cups Mozzarella Cheese, shredded

  • 1/2 Cup Mushrooms, sliced

  • 1/2 Cup Green Peppers, chopped


Directions

  1. Preheat oven to 400 degrees.

  2. Add Sweet Potato and oats to a blender or food processor and pulse until very fine.

  3. Add the Egg and Seasonings; pulse until contents resemble a loose dough or thick batter.

  4. Line a cookie sheet or other pan with parchments paper and spread 1 Tbsp Olive Oil evenly over paper.

  5. Add dough to pan and press to shape. Crust should be about ¼ - ½ inch thick.

  6. Bake for 25-30 minutes, until top is dry to the touch.

  7. Remove from oven, let cool, and flip crust over on the pan. Brush top side with Olive Oil and bake for another 5-10 minutes, until top is crispy.

  8. Top with Cheese and Vegetables and put back in the oven to melt the Cheese.
