Ingredients

  • 1 tsp olive oil

  • 2 cloves garlic, whole

  • 2 cups pinto beans, drained and rinsed

  • 1/4 cup onion, finely diced

  • 1/4 cup jalapeno pepper, finely diced

  • 1 tsp cumin

  • 1 tsp chili powder

  • Sea salt and pepper to taste

  • 1/2 lime, juiced


Directions

  1. Heat olive oil in a skillet over medium heat. Cook whole garlic cloves on each side for about 2 minutes, or until slightly browned.

  2. Mash garlic cloves in the oil with a fork.

  3. Stir in the pinto beans, onions, peppers and spices with the mashed garlic and cook for about 5 minutes or until heated throughout, stir occasionally.

  4. Mash the bean mixture with a potato masher until desired consistency. Squeeze lime juice over top and stir to combine.
