1 tsp olive oil
2 cloves garlic, whole
2 cups pinto beans, drained and rinsed
1/4 cup onion, finely diced
1/4 cup jalapeno pepper, finely diced
1 tsp cumin
1 tsp chili powder
Sea salt and pepper to taste
1/2 lime, juiced
Heat olive oil in a skillet over medium heat. Cook whole garlic cloves on each side for about 2 minutes, or until slightly browned.
Mash garlic cloves in the oil with a fork.
Stir in the pinto beans, onions, peppers and spices with the mashed garlic and cook for about 5 minutes or until heated throughout, stir occasionally.
Mash the bean mixture with a potato masher until desired consistency. Squeeze lime juice over top and stir to combine.
