Ingredients

  • 1-1/2 cups uncooked oatmeal

  • 3/4 cup sliced raw almonds

  • 1/4 cup raw cashews

  • 1/2 cup raw pepitas (green pumpkin seeds)

  • 1/4 cup unsweetened coconut flakes

  • 1 tsp cinnamon, ground

  • 3 Tbsp coconut oil

  • 3 Tbsp honey

  • 1 tsp vanilla extract


Directions

  1. Preheat oven to 250°F. Cover a baking sheet with parchment paper.

  2. In a large bowl, combine dry oats, nuts, coconut, seeds and cinnamon. Mix well.

  3. Combine coconut oil and honey in a small saucepan over low heat. Add vanilla. Mix well.

  4. Pour hot liquids over dry ingredients. Stir until evenly coated.

  5. Spread mixture onto prepared pan in one even layer. Bake 75 minutes.

  6. Remove from oven and let cool. Store in air tight container at room temperature for up to 2 weeks.
