GOLO BBQ Chicken with Peachy Salad

Ingredients

  • 1 Tbsp olive oil

  • 2 Tbsp red wine vinegar

  • 1/4 tsp sea salt

  • 1/4 tsp ground black pepper

  • 2 cups fresh peaches, sliced

  • 4 cups lettuce

  • 4 cups broccoli slaw

  • 1-1/2 lbs chicken breast, grilled or baked and cut into strips

  • 1/4 cup GOLO BBQ sauce, recipe: https://www.golo.com/blogs/recipes/golo-bbq-sauce

  • 4 Tbsp feta cheese


Directions

  1. In a large bowl, whisk together olive oil, red wine vinegar, salt and pepper. Add peaches, lettuce and slaw. Toss to coat.

  2. Place chicken strips in a large bowl and toss with BBQ Sauce.

  3. Divide the peaches, lettuce and slaw mixture into 4 equal servings.

  4. Top with chicken strips. Sprinkle with feta cheese.
