Ingredients

  • 2 eggs

  • 1 cup almond milk, unsweetened

  • 2 Tbsp honey

  • 1/4 tsp sea salt

  • 3/4 tsp baking soda

  • 1/2 tsp baking powder

  • 2-3/4 cups oat flour

  • 1/4 cup ground flaxseed


Directions

  1. Preheat oven to 350°F.

  2. In a large bowl, whisk eggs, almond milk, honey and salt.

  3. In a food processor, mix baking soda, baking powder and oat flour, about 10 seconds, then add ground flax seed. Mix. Pour into bowl with eggs. Mix well.

  4. DO NOT SKIP THIS STEP! Let the mixture sit for about 5 minutes.

  5. Line an 8 x 4 loaf pan with parchment paper. Lightly coat with olive or coconut oil. Carefully shape dough into a loaf and place in pan.

  6. Bake on top rack 40-45 minutes.

  7. Let cool overnight. Longer cooling makes it less crumbly.
