Ingredients

  • 4- 6 oz. chicken breasts

  • 1/4 cup lite coconut milk, canned

  • 1/2 Tbsp olive oil

  • 1 clove garlic

  • 1/2 tsp turmeric

  • 1/2 Tbsp ginger, grated

  • 1/4 tsp cumin

  • 1/4 tsp sea salt

  • 1/2 Tbsp lime juice


Directions

  1. Place chicken in a large container.

  2. Whisk all other ingredients together and pour over chicken, making sure to cover it completely.

  3. Allow chicken to marinate for at least 1 hour, or up to 24 hours.

  4. Heat grill. Grill chicken, covered, about 5 minutes on each side, or until juices run clear.
