3 cups strawberries or blueberries
2 Tbsp (+ more if needed) water
1 tsp lemon juice
2 tsp honey
Add berries, water, lemon juice, honey, and any additional flavorings if using (see below) to a small saucepan.
Bring to a boil over medium heat, stirring occasionally (this should take about 5 minutes, or 10 minutes if fruit is frozen).
Reduce heat to low. Mash berries to release juices and let simmer for another 10 to 20 minutes, stirring often to prevent burning.
Remove from heat. Add more water if desired for consistency. Use a potato masher or immersion blender to puree if you would like it to be smoother.
Add flavors, if desired (see below). Let cool completely and refrigerate in a covered glass jar for up to 7 days.
