Ingredients

  • 2 scallions, thinly sliced

  • 1/2 cup brown rice, cooked

  • 1/2 tsp red wine vinegar

  • Sea salt and pepper to taste

  • Organic cooking spray

  • 2 eggs

  • 1/4 cup avocado, chopped


Directions

  1. Mix scallions, rice, and vinegar in a small bowl. Season with salt and pepper.

  2. Spray cooking oil into a non-stick skillet over medium-high heat. Crack eggs into skillet and season with salt and pepper. Cook until whites are set around the edges, about 1 minute. Flip eggs and cook to desired doneness.

  3. Place eggs on top of rice mixture and top with avocado.
