2 scallions, thinly sliced
1/2 cup brown rice, cooked
1/2 tsp red wine vinegar
Sea salt and pepper to taste
Organic cooking spray
2 eggs
1/4 cup avocado, chopped
Mix scallions, rice, and vinegar in a small bowl. Season with salt and pepper.
Spray cooking oil into a non-stick skillet over medium-high heat. Crack eggs into skillet and season with salt and pepper. Cook until whites are set around the edges, about 1 minute. Flip eggs and cook to desired doneness.
Place eggs on top of rice mixture and top with avocado.
