Curried Sweet Potatoes and Spinach

Ingredients

  • 2 cups Sweet Potatoes, diced

  • 1 Tbsp Olive Oil

  • 1 cup Onion, thinly sliced

  • 1 clove garlic, grated or minced

  • 1/2 tsp Salt

  • 1/2 tsp Pepper

  • 1/2 tsp Ground Cumin

  • 1/2 tsp Turmeric

  • 1/2 tsp Ground Ginger

  • 1/2 Tbsp Chili Powder

  • 1/2 cup Vegetable Broth

  • 3 cups Spinach


Directions

  1. Boil the diced sweet potatoes in water until fork tender. Do not overcook.

  2. While sweet potatoes are cooking, add olive oil to a large sauté pan and cook the onions for 3-4 minutes or until onions turn clear. Add garlic and sauté for another 2 minutes.

  3. Add salt, pepper, cumin, turmeric, ginger, chili powder and broth. Bring to a simmer

  4. Add in the spinach and cook until wilted.

  5. Stir in sweet potatoes and heat through

  6. Divide in 4 equal servings.
