2 cups Sweet Potatoes, diced
1 Tbsp Olive Oil
1 cup Onion, thinly sliced
1 clove garlic, grated or minced
1/2 tsp Salt
1/2 tsp Pepper
1/2 tsp Ground Cumin
1/2 tsp Turmeric
1/2 tsp Ground Ginger
1/2 Tbsp Chili Powder
1/2 cup Vegetable Broth
3 cups Spinach
Boil the diced sweet potatoes in water until fork tender. Do not overcook.
While sweet potatoes are cooking, add olive oil to a large sauté pan and cook the onions for 3-4 minutes or until onions turn clear. Add garlic and sauté for another 2 minutes.
Add salt, pepper, cumin, turmeric, ginger, chili powder and broth. Bring to a simmer
Add in the spinach and cook until wilted.
Stir in sweet potatoes and heat through
Divide in 4 equal servings.
