3 cups cucumber, julienned or cut with a spiralizer
1 cup carrots, julienned or cut with a spiralizer
18 oz cooked chicken
2 tsp sesame oil
2 tsp sesame seeds
Lime juice from 2 limes
1/2 cup cilantro, chopped
1/2 cup basil, chopped
4 oz cashews, chopped
In a large bowl, combine cucumbers, carrots, chicken, sesame oil, sesame seeds, and lime juice. Toss well.
Top with cilantro, basil, and cashews immediately before serving.
