Ingredients

  • 2 Tbsp + 2 tsp butter

  • 4 cups corn, fresh or frozen

  • 1 clove garlic, minced

  • 1 Tbsp fresh lime juice

  • 1/4 tsp cayenne pepper

  • 1 tsp cumin

  • 1/3 cup parmesan cheese

  • 1/3 cup heavy cream

  • Sea salt and pepper to taste

  • 1/2 cup fresh cilantro, chopped


Directions

  1. Melt the Butter in a large skillet. Add Corn and Garlic. Stir to coat the Corn for about 2 minutes.

  2. Add Lime Juice, Cayenne Pepper and Cumin and stir for another 2-3 minutes.

  3. Add Cheese and stir to incorporate and then add Heavy Cream. Continue to stir.

  4. Add Salt and Pepper to taste.

  5. Cook until most of the cream has been absorbed. About 5 minutes.

  6. Remove the skillet from the heat, add Cilantro and serve.
