2 Tbsp + 2 tsp butter
4 cups corn, fresh or frozen
1 clove garlic, minced
1 Tbsp fresh lime juice
1/4 tsp cayenne pepper
1 tsp cumin
1/3 cup parmesan cheese
1/3 cup heavy cream
Sea salt and pepper to taste
1/2 cup fresh cilantro, chopped
Melt the Butter in a large skillet. Add Corn and Garlic. Stir to coat the Corn for about 2 minutes.
Add Lime Juice, Cayenne Pepper and Cumin and stir for another 2-3 minutes.
Add Cheese and stir to incorporate and then add Heavy Cream. Continue to stir.
Add Salt and Pepper to taste.
Cook until most of the cream has been absorbed. About 5 minutes.
Remove the skillet from the heat, add Cilantro and serve.
