Ingredients

  • 2 Tbsp olive oil

  • 1 tsp butter

  • 2 cups onion, chopped

  • 4 cloves garlic, minced

  • 10 cups broccoli florets

  • 1 tsp cumin

  • 1/2 tsp thyme

  • 1/2 tsp nutmeg

  • 5 cups vegetable stock

  • 1 cup whole milk

  • Sea salt and pepper to taste


Directions

  1. Heat olive oil and butter in a large pot over medium heat.

  2. Add onion and garlic. Cook 3-5 minutes or until onions are translucent and garlic fragrant.

  3. Add broccoli. Cook for 5 more minutes.

  4. Sprinkle in cumin, thyme, and nutmeg.

  5. Incorporate vegetable stock and stir. Reduce heat to a simmer.

  6. Pour into a blender or food processor and blend until smooth, then return to pot.

  7. Add milk. Mix well.

  8. Season with salt and pepper, to taste. Cook 5-8 minutes.

  9. Separate into 6 equal servings.
