2 Tbsp olive oil
1 tsp butter
2 cups onion, chopped
4 cloves garlic, minced
10 cups broccoli florets
1 tsp cumin
1/2 tsp thyme
1/2 tsp nutmeg
5 cups vegetable stock
1 cup whole milk
Sea salt and pepper to taste
Heat olive oil and butter in a large pot over medium heat.
Add onion and garlic. Cook 3-5 minutes or until onions are translucent and garlic fragrant.
Add broccoli. Cook for 5 more minutes.
Sprinkle in cumin, thyme, and nutmeg.
Incorporate vegetable stock and stir. Reduce heat to a simmer.
Pour into a blender or food processor and blend until smooth, then return to pot.
Add milk. Mix well.
Season with salt and pepper, to taste. Cook 5-8 minutes.
Separate into 6 equal servings.
