3 cups cherry tomatoes, halved
2 cups corn, cooked
1 cup red onion, thinly sliced
1/2 cup avocado, diced
2 cups red bell pepper, diced
1/8 cup cilantro, chopped
1 garlic clove, minced
1 Tbsp olive oil
1 Tbsp freshly squeezed lime juice
Sea salt & pepper to taste
In a large bowl combine tomatoes, corn, red onion, avocado, red peppers, cilantro, and garlic.
Drizzle olive oil and lime juice over vegetables. Season with salt and pepper to taste. Gently toss to combine.
Divide into 5 even servings.
