Ingredients

  • 2 Tbsp Olive Oil

  • 3 Cloves Garlic, minced

  • 1/2 Cup Red Onion

  • 1/2 tsp Crushed Red Pepper Flakes

  • 2 Cups Cherry Tomatoes, halved

  • 1/4 Cup Dry White Wine

  • 1/2 Cup Fresh Basil Leaves, chopped

  • 2 Tbsp Lemon Juice

  • Zest from 1 Lemon

  • Sea Salt and Pepper to taste

  • 2- 6oz Cod Fillets


Directions

  1. In a skillet heat 1 Tbsp Olive Oil on low-medium heat. Add the Garlic, Onion and Crushed Red Pepper Flakes, cook for 1-2 minutes.

  2. Add in the halved Cherry Tomatoes and cook for another 2-3 minutes.

  3. Add the Dry White Wine and bring to a low boil then add the Basil, Lemon Juice, Lemon Zest, Sea Salt and Pepper.

  4. Reduce the heat to low and let it simmer for 8-10 minutes.

  5. In a separate skillet heat the remaining Tbsp of Olive Oil on medium heat and cook the Cod fillets for 4-5 minutes per side.

  6. Serve the Cod topped with 1 Cup of the Cherry Tomato Relish.
