2 Tbsp Olive Oil
3 Cloves Garlic, minced
1/2 Cup Red Onion
1/2 tsp Crushed Red Pepper Flakes
2 Cups Cherry Tomatoes, halved
1/4 Cup Dry White Wine
1/2 Cup Fresh Basil Leaves, chopped
2 Tbsp Lemon Juice
Zest from 1 Lemon
Sea Salt and Pepper to taste
2- 6oz Cod Fillets
In a skillet heat 1 Tbsp Olive Oil on low-medium heat. Add the Garlic, Onion and Crushed Red Pepper Flakes, cook for 1-2 minutes.
Add in the halved Cherry Tomatoes and cook for another 2-3 minutes.
Add the Dry White Wine and bring to a low boil then add the Basil, Lemon Juice, Lemon Zest, Sea Salt and Pepper.
Reduce the heat to low and let it simmer for 8-10 minutes.
In a separate skillet heat the remaining Tbsp of Olive Oil on medium heat and cook the Cod fillets for 4-5 minutes per side.
Serve the Cod topped with 1 Cup of the Cherry Tomato Relish.
