4 6-oz chicken breasts
2 cups sweet potatoes, cut into 1/2-inch cubes
8 cups carrots, cut into 1/2-inch chunks
2-1/2 tsp ground cinnamon
1 tsp ground cloves
1 tsp ground ginger
2 Tbsp dried parsley
2 Tbsp olive oil
Preheat oven to 400°F.
In a large bowl, combine all ingredients. Mix until ingredients are evenly distributed.
Remove chicken. Set aside. Pour sweet potatoes and carrots on to rimmed sheet pan. Spread out so they do not touch.
Cook 15 minutes, then remove potatoes / carrots from oven and toss with a spatula (to cook on all sides).
Add chicken and return to oven. Cook 20 minutes more, or until chicken juices run clear and potatoes and carrots are tender.
