Ingredients

  • 1/3 cup quinoa, dry

  • 1 cup almond milk, unsweetened

  • 2 tsp butter (coconut oil for vegan substitute)

  • 1 cup chopped apples

  • 2 tsp cinnamon

  • 2 tsp honey (maple syrup for vegan substitute)


Directions

  1. In a sauce pan over medium-high heat, combine rinsed quinoa, almond milk, fat of choice, and apples. Bring to a boil, then cover and reduce to a simmer for 20 minutes or until the apples are soft and the quinoa is fully cooked.

  2. Stir in cinnamon. Divide into two equal servings.

  3. Drizzle with honey or maple syrup.
