1/3 cup quinoa, dry
1 cup almond milk, unsweetened
2 tsp butter (coconut oil for vegan substitute)
1 cup chopped apples
2 tsp cinnamon
2 tsp honey (maple syrup for vegan substitute)
In a sauce pan over medium-high heat, combine rinsed quinoa, almond milk, fat of choice, and apples. Bring to a boil, then cover and reduce to a simmer for 20 minutes or until the apples are soft and the quinoa is fully cooked.
Stir in cinnamon. Divide into two equal servings.
Drizzle with honey or maple syrup.
